Dal Baati Churma as its called.
This dish comes from Western part of India, originated in Jodhpur of Rajasthan (One of the Indian states). While traditionally made from pearl millerts (bajra), modern day cooking replaces bajra with wheat.
Dal is a lentil soup made with 2-3 different kind of lentils, seasoned with clarified butter, and Indian spices (Kashmiri chili powder, coriander powder, Dry mango powder(Aamchur), garam masala), mustard, cumin, dry red peppers, bay leaf, cloves, curry leafs, cilantro,ginger, garlic and asafetida.
Baati is hard unleavened bread baked in oven at 350-400 F for 20-30min made with clarified butter, baking soda, baking powder, wheat flour, semolina (sooji). Churma- Sweet dish made from coarsely ground baked hard wheat bread (baati) in clarifies butter, powdered sugar with chopped almonds, cashews and cardamom.
